I flew Air Canada from Calgary to Heathrow in late June, 2013. The flight went smoothly for the most part and here's my review. For those of you concerned about the availability of a gluten free meal on the flight, I had a first hand experience of the usual struggle that we celiacs face all too often. I had ordered a gluten-meal when booking my flight. However, when we all received our food on the flight, I was given a regular meal. The two regular meals were pasta and couscus (neither gluten-free). When I told them I was supposed to get a gluten-free meal, they denied it. I then asked for the list, and sure enough, my name and 'gluten-free' was on it. They were extremely apologetic and recovered well by bringing me cheese and fruit. They even gave me a gluten free snack towards the end of the flight. Overall, safe, reliable, and met expectations.
